Soak 1-1.25 cup suji in 3/4 cup sour curd for 30 minutes. Mix well adding salt as per taste and little water to form a lump free batter. Keep aside for 30 minutes more.

Then pour the batter in greased idli moulds and steam for about 12-15minutes.
Remove the idlis from the steamer and demould when it cools. - 3
Cut idlis into pieces. Chop onion,capsicum and carrots. Heat a tsp ghee in a pan, crackle mustard seeds and curry leaves in it. Add the chopped veggies and cook for a minute or two.

Add salt as per taste, 1/2 tsp sambhar masala. Add 1 tsp ketchup and schezwan chutney. Give a good mix.
Add cut idlis and chopped coriander and mix well.
Serve hot 😊 - 5
Water as required to maintain the consistency of the batter
