Fill an 8-inch cast-iron skillet half-way up with oil. Heat the oil.
In a large bowl, mix together the besan, red chili flakes, salt, baking powder, sliced green chillies,pepper, cilantro, spring onion,spinach, potatoes and sliced onion. - 2
Slowly add in the water, while mixing with a wooden spoon or your hands. Vigorously mix for a couple of seconds. The batter should be thick, almost like heavy (double) cream (whipped cream) and there should be air bubbles throughout.

Once the oil is heated, carefully place in heaping tablespoon full of batter into the hot oil. Try not to overcrowd the oil because it will result in greasy pakoras. Fry until the pakoras are a pecan-brown. Drain on a cooling rack placed over a kitchen towel tissue
Repeat with the remain of the batter.
Serve raita and sauce right away, and enjoy. - 4
👉Option 1: Baked Pakora
In baking tray,place ramekins and grease with olive oil.
Add prepared pakora mixture and bake in preheated oven at 200 C for 10 minutes. - 5
👉Option 2: Air Fried Pakora
In air fryer machine,place ramekins and grease with olive oil,add prepared pakora mixture and air-fry at 200 C for 10 minutes.
