I hate the "M" word so lets just say that this delicious cake is not at all dry 😊 and it stays "M" even when stored open in the refrigerator for days.
Steps

Preheat oven to 180°c

Line 2 x 10inch baking pans with baking paper

To make the Cake:

Melt the butter and whisk in the Xylitol
- 5
Beat in the eggs followed by the soured cream, almond milk and vanilla
- 6
Mix in all of the dry ingredients and then pour the mixture into the 2 pans
- 7
Bake for 20 to 25 minutes

Let the cakes cool completely and then remove from the tins
- 9
Meanwhile, mix together all of the frosting ingredients
- 10
Cover the top of one of the cake layers with the frosting and then place the second layer on top
- 11
Now cover the entire cake with the frosting
