One of the most restricted things when dieting is fat, so you have to get creative to cook with little oil. For this huevos rancheros recipe, I use only one teaspoon of oil. The secret is to use a very good non-stick pan. It turns out delicious and satisfies the craving!

Ingredients

5 minutes
1 serving
  1. 1corn tortilla
  2. 1egg
  3. 1 teaspoonavocado oil
  4. 1/4 cupsalsa of your choice, I used tomato with chile de árbol
  5. 1/2 cupcooked beans

Cooking Instructions

5 minutes
  1. 1

Prepare all the ingredients. Heat a non-stick pan, pour in half a teaspoon of oil, and spread it over the base of the pan. Place the tortilla and heat well on both sides. Transfer to a plate.

  2. 2

Add the other half teaspoon of oil and let it heat well. Crack the egg into a cup and carefully pour it into the pan so the yolk doesn't break. Lower the heat and let it cook to your liking. You can cover it so the white is well cooked and the yolk is tender.

  3. 3

Place the egg on the tortilla. Pour the salsa into the pan to heat it; no more oil is needed. Also, heat the beans in the microwave or another pan. Cover the egg with the salsa and serve with the beans.
