Steps

Gather all the ingredients.

Throw in the tripe, salt, black pepper, and garlic in a pressure cooker and add enough water. Cover and let it boil until tender(I boiled mine for 60 min).

In another cooking pot fry your onions until translucent with a pinch of salt. Sieve the tripe but don't discard the water(save for later) for it will help you achieve a thick gravy.

Add the tripe to the onions and sprinkle your herb and spices(thyme, cumin, Garam masala, and paprika) and stir for 2 min. Add everything to your liking.

Add your diced tomatoes and stir every 1 min until they are well cooked.

Finally, add the tripe soup you saved after sieving the tripe and stir well(At this point, taste your salt and adjust if need be).
Throw in your dhania/cilantro, stir and switch off the fire. - 7
Serve and enjoy😋.
