Feel healthier with this delicious bread recipe that uses only whole wheat flour. You can make many different kinds of deli bread with this dough, so it's convenient.

Course Black Pepper: if you have it, use it. When letting the bread machine knead the dough, if you add in all of the ingredients into the machine at once, the bread will tend to get stale a lot more quickly.
As for the flour, I used Super Camellia brand (please adjust the amount of water added, according to the type of flour used. Domestic bread flours won't need as much water.) Recipe by DUFFYchan

Ingredients

  1. 270 gramsBread flour
  2. 30 gramsWhole wheat flour
  3. 20 gramsSugar
  4. 5 gramsSalt
  5. 10 gramsSkim milk powder
  6. 6 gramsDry yeast
  7. 30 gramsEgg
  8. 170 gramsWater
  9. 20 gramsShortening

Steps

    I used whole wheat flour because it's rich in fiber, minerals and vitamins.

  2. 2

    Add the shortening when a slightly glutinous film forms on the surface of the dough (At this point, you should be able to see through the dough if you stretch it out thinly enough).

  3. 3

    When you are letting the bread machine knead the dough, add in all the ingredients other than the shortening and let it start kneading. After about 10 minutes, add in the shortening.

  4. 4

    Ideal water temperature: If it's spring or fall, it should be about 86℉ (30℃). If it's summer, it should be about 50℉ (10℃). If it's winter, heat it up in the microwave till it's about 113℉ (45℃).

  5. 5

    Temperature of the shortening: In order to keep the dough at an ideal temperature, be sure to use softened shortening so it can be easily mixed in.

  6. 6

    If you have some left over egg, coat the top of the dough with it.

  7. 7

    You can make all kinds of savory bread with this recipe.
