This is a dish I always have on stock in my refrigerator.

Making sure there's no moisture left is a hint for preserving it, perhaps? If you add the shiitake last they'll absorb the moisture. Recipe by Achakosama

Ingredients

  1. 200 gramsGround chicken breast
  2. 1 blockFirm tofu
  3. 1 mediumCarrot
  4. 6Shiitake mushrooms
  5. 1 tbspeach Mirin, soy sauce

Cooking Instructions

  1. 1

Heat a frying pan, and add the ground chicken breast while breaking it up.

  2. 2

Once the ground chicken breast is crumbly, add the tofu while breaking it into pieces. You don't have to drain it.

  3. 3

Add the minced carrots and cook well.

  4. 4

Once the carrots have softened add the mirin and soy sauce.

  5. 5

Add the minced shiitake. Once the moisture has cooked off it's ready.

  6. 6

You can add sesame oil as a finishing touch! You can also top with egg for an oyako-don style! Adding minced greens will make it look nice.

  7. 7

I recommend serving this on rice with some shichimi spice!
