I was bored with regular somen noodles, but store-bought mentsuyu is expensive and I only had a little of it, so I tried making this dipping sauce.

The mentsuyu, ra-yu, sesame seed, ginger and green onion amounts are an approximate. Adjust the amount to your liking.
Try with salted sliced cucumber, tomatoes, myoga ginger, shiso leaves, etc. to make a hearty noodles dish!
This dipping sauce can be used with rice or udon noodles too. Recipe by Nekoyanagi shouten

  2. 100 mlKombu based mentsuyu (3x concentrate)
  3. 200 mlFiltered water
  4. 1to 2 tablespoons Sesame paste
  5. 5drops or so ★Ra-yu (best if with chili flakes)

  7. 1 tbsp★Ground sesame seeds
  8. 1ton, as garnish Green onions or scallions

Cooking Instructions

Put the ground sesame in a bowl. Mix the mentsuyu and water in little by little using a whisk.

  2. 2

Add all the ★ ingredients and mix.

Variation 1: Natto and summer vegetables with sesame sauce on top of tofu = an isoflavone packed dish!

  6. 6

Variation 2: Cold rice with sauce and summer vegetables. Rinse hot rice with ice water to make a non-sticky and light zosui (rice soup).

  7. 7

Variation 3: A noodle salad-type dish made with thin udon noodles, cucumber, shiso leaves, kimchi and mayonnaise.

  8. 8

Try adding boiled pork, boiled chicken, lettuce etc.
