My parents-in-law always use this sesame dipping sauce.

When you double the amount, adjust the flavour with salt at the end.

Ingredients

3 servings
  1. 5 tbspToasted sesame seeds
  2. 1 cloveMinced garlic
  3. 3 tbspWhite miso
  4. 1 dashIchimi spice
  5. 1 tbspLemon juice
  6. 1 tbspMirin
  7. 2 tbspSoy sauce
  8. 2 tspVegetable oil
  9. 1/2 tspSalt
  10. 100 mlKombu based dashi stock (※granules dissolved in water)

Cooking Instructions

    Grind the toasted sesame seeds well in a suribachi (Japanese mortar) until the oil comes out and they become moist (Like in the picture.)

  2. 2

    Add garlic, and continue grinding lightly. Add the rest of the ingredients from the top of the list in order. Mix well and it's done!

  3. 3

    If the suribachi is too small, when you pour in the dashi stock, transfer the ingredients from the mortar to a larger bowl.
