Ingredients

16-18 falafel
  • 500 gsweet potato (approx)
  • 100 ggram flour
  • 2 tspground coriander
  • 1 tspground cumin
  • 1 tbsplemon juice
  • 1 tspminced garlic
  • 1 tspharissa paste (optional)
  • handfulcoriander leaves, chopped

Steps

    Peel and chop the sweet potato and cook it in a steamer or the microwave until soft. For example, use the julienne blade on a food processor and cook the sweet potato in the microwave for 8 to 10 minutes. Leave to cool.

    Once the potato is cool enough to handle comfortably, prepare a baking sheet (line, or brush with a little oil). Preheat the oven to 200C.

  3. 3

    Place the pre-cooked sweet potato and all the other ingredients in the food processor and combine to a smooth consistency.

    Make roughly tablespoon-sized balls of the sweet potato mixture by rolling pieces in your hands, flatten them slightly, and arrange them on the baking sheet. You should get about 16 to 18 falafel from this recipe.

    Bake for 12 minutes, then flip each falafel and bake for about 10 minutes on the other side.
