Patra / Patrode two ways

Patrode/ Patrodo/ Patra/ Patrodu is vegetarian dish from Western coast & Himachal Pradesh, India. It is known as Patra in Gujarat, Patrodo or Aloo wadi in Maharashtra & Goa, Patrode in Coastal Karnataka & Patrodu in Himachal Pradesh.
I make patra using besan and jowar flour half half same as my mum does as she makes world best patra
Along with flour, fresh and dry spices, crushed peanuts, jaggery and tamarind pulp are added to make a thick batter to apply on the leaves. Then the rolls are steamed.
You can have it straight with some peanut oil or give it a tadka or fry it. All types taste absolutely wonderful.
It is a spicy, sweet and tangy snack which goes well with tea or coffee. During summers, it is usually paired with fresh mango ras and the combo is awesome!

Remove the veins from the leaves and wash them properly to remove any impurities.

In a big bowl add all the ingredients to make a mixture to apply on the leaves. Mix it well. Keep it thick but spreadable consistency. You can adjust the amount of water according to your requirement.

Now take one leaf on a flat surface. Put another two smaller leaves on each side. Apply prepared mixture evenly. Now fold both sides of the leaves and again cover it with the mixture.

Now fold it in half coming from top to bottom and again apply some spice mixture. Now roll it and keep aside. Prepare all the rolls in the same way.

Now steam it in a steamer on medium heat for 45 - 50 min or until cooked perfectly. Let it cool down completely and cut into slices. It can be even enjoyed just like that with some peanut oil on top.

To shallow fry patra, take slices and add it to hot pan with enough oil. Shallow fry it until golden brown. Then flip each piece and fry it again until golden brown. Drain it on a kitchen towel. It can be deep fried too in hot oil if you want. Serve it hot.

Tadka is another method to prepare patra. To give tadka, add oil in a pan and heat it. Add mustard seeds and let it crackle. Now add hing and sesame seeds to it and add patra slices. Mix everything well and cook on medium heat for 5 min. Add coriander leaves and turn off heat. Serve hot.

Serve patra hot as a side dish with your meal or it can be served as a snack with tea or coffee.
