Steps

Peel, slice and julienne the potatoes. Rinse in a bowl of water while changing the water 2 to 3 times, and drain well

Heat the olive oil in a frying pan over medium heat. Add the julienned potatoes and stir fry briefly.

Add the vinegar and stir fry some more, then season with salt and pepper.

Transfer to a serving plate and sprinkle with chopped parsley.
