Tawa Charkoni Rotis or Square Rotis

Simple yet high Carb nashta of a Hyderabadi on any given day and especially on weekends. These Rotis can be made with Oil too. My mom used to make like this for us and I do the same now for my family. Nothing much fancy here, just simple Rotis with Ghee and Mutton cooked in Indian spices. Only thing is that I made them square shaped. We can make triangular rotis too. By doing this, they become cottony soft and just melts in the mouth. Applying little Ghee and folding them makes them so soft and delicious. Aroma of ghee is also so very captivating in this particular dish and Charkoni means square shaped Rotis. Do try this out for your loved ones people. You will surely love them for Breakfast.

Make a smooth dough out of all the ingredients mentioned. Keep it covered for 15 minutes. Use of water depends upon the quality of the Wheat Flour.

Divide the dough into equal size balls. Roll them into Square shapes. While folding apply some Ghee on the Roti and fold. You can use Oil also. But using Ghee gives you soft fluffy and flaky Charkoni Rotis.

Roast all of them using Ghee on a low to medium high heat on both the sides by turning at regular intervals. See to it that they are roasted well on both the sides.

Keep them warm in a casserole. Serve them alongside piping hot Mutton Masala or Hyderabadi Tala huwa Gosht or Hyderabadi Tala huwa Kheema, Hyderabadi Ande ka Khagina etc. Maash Ki Daal, Khadi Daal are also very good options.
