Vegan Pancakes No Eggs, Milk or Oil

There are egg free and milk free recipes, but not many which are both egg and milk-free, so I made one.
If you use the almond powder as is, it'll taste raw, so roast it in a pan or oven first (it takes a little time, but the final result will be different. Give it a try).

Cooking Instructions

Roast the almond powder on a pan until golden.

Put all the ★ ingredients (everything but the soy milk) in a bowl and whisk (If you mix at this step, you don't need to sift the dry ingredients. Easy!)

Add soy milk and whisk to a smooth consistency.

Heat a pan over low heat and pour the batter.

When the surface is bubbly, turn over and cook the other side.

It's finished when it's cooked on both sides!

My dad and I were trying to find out what to make with rice flour. I am really proud of this recipe. The ingredient ratios are so easy to remember and I've made it over and over. These delicious pancakes remind me of the sweet rice cakes my grandma made for me when I was a kid.The amount of soy milk can be adjusted to make the cakes firmer if you prefer.
