Egg-Free Pancakes

I made these since my daughter is allergic to eggs. I came up with this recipe after a lot of trial and error, so I decided to post it for my own reference.
These turn out fluffier if you make them larger Bake up a bunch and freeze them Enjoy them with jam or your favorite toppings Cut them up into pieces to serve your little ones. For three 18 cm [7.1 in] pancakes. Recipe by Iringo
Egg-Free Pancakes

Cooking Instructions

Combine the yogurt and milk (or soy milk) in a bowl and mix.

Add the pancake mix and briskly mix. Don't over-mix! You can leave a few lumps.

Then all you have to do is make them in a frying pan Be sure not to under-bake them; bake them all the way through!

I wanted to try making a tofu pancake myself since they have been so trendy as of late.Ahh!! But I didn't have an egg! I tried making one anyway with what I had on hand, it turned out really delicious.Silken tofu is the best, but if you don't have it, then firm tofu is fine.Be careful not to over mix when you combine the dry and wet ingredients!! If you do, then they will turn out to be more like flat crepes!!When you are cooking them, you should let heated the frying pan rest on a damp cloth for three seconds. Ma mom doesn't really like food with egg, so i almost make pancake without egg and add melted salted butter in it.. i like to use salted butter because i think it's greater than using butter and salt (: but if you want, you can use unsalted butter with salt.. just as you like. Even though it was my first time making them, they turned out great and were delicious.Don't add the water all at once; add it a little at a time while checking the consistency of the batter.You should only need to add olive oil once to the frying pan.If serving with cheese, I recommend reducing the amount of salt. I do this tiny amount (only 4 pancakes) because my daughter likes to have it for breakfast. And she doesn’t need more than 4 🤗 she likes it with whipped cream but you can add chocolate chips to the batter. A lot of tiny details in the process but it’s worth to get a hang of it. Lina Bond
