Wild Garlic Pesto Pappardelle With Crispy Bacon & Pine Nuts

If you're looking to use up the last of the seasons wild garlic pesto then this is the dish for you. However, even if you don't have access to some beautiful wild garlic pesto this recipe would still work wonderfully with regular pesto with plenty of minced garlic added in for punch! This dish would be wonderfully good eaten outside in the sunshine with a chilled glass of white.

Begin cooking your pasta in boiling salted water according to packet instructions and heat up a frying pan over a medium high heat. Once the pan is hot add in the pine nuts and lightly toast them then remove and set aside for later.

Add the streaky bacon to the hot frying pan and spray with a little oil. Fry until nice and crispy then place upon kitchen towel to remove access oil.
Towards the end of cooking add the wild garlic leaf in with the pasta until wilted then remove. Slice up finely. - 3
Slice up the crispy bacon into small pieces.
Drain off the pasta, reserving a little of the pasta water in the saucepan with it.
Season well with salt and pepper and squeeze over the lemon juice. - 4
Add the pesto, most of the bacon and pine nuts and gently stir through to coat the pasta.
Serve up, scatter over the remaining pine nuts, bacon and add parmesan shavings plus a few fresh parsley leaves. Serve up and enjoy! :)
