"Madeleines" refer to a small cake "Cakes a lá Madeleine", apprearing initially in France, in the middle of 18th century. With their fancy appearance and classy name, they can be intimidating with most basic ingredients. I incorporated my personal twist in the recipe by separating the basic batter to produce two distinct flavors, lemon and cocoa!

Ingredients

multiple
  • 1 cupall-purpose
  • 1/2 cupmelted butter
  • 1/2 cupsugar
  • 2eggs
  • 1 tspvanilla essence
  • 1/2 tsplemon juice
  • 1/2 tspbaking powder
  • 1/2 tsplemon zest
  • Pinchsalt
  • Yellow food colour (separate)
  • Pinchcocoa powder (separate)
  • Greasing
  • 1 tbspoil
  • Dry flour to dust pan
  • Topping
  • Confectioner's sugar for icing

Steps

    Mix dry ingredients. Beat egg and sugar together till mixture is airy and frothy. Mix wet ingredients into dry and fold nicely without lumps. Cover bowl with cling film and keep refridgerated. This is a must step.

    Divide the batter into 2 portions in separate bowls. Add yellow food colour in one bowl and cocoa powder in other bowl.

    Madelines are baked in pattern moulds or pans called "scallop" pans. I have used silicon scallop pans, yet scallop tins can also be used. Grease the pans with oil and dust flour generously. Bake in preheated oven at 180°C for 30 mins.

  4. 4

    Remove and let them cool down on cooling rack. Sprinkle confectioner's sugar on top while they are warm. Madelines are usually served hot with tea or coffee. Enjoy with Team Zaafran Cookpad!
