Ingredients

Serves 8 servings
  • For the filling:
  • 1/4 cupvegetable oil (60 ml)
  • 2.2 lbsfinely ground beef (1 kg)
  • 5small onions, finely chopped
  • Salt to taste
  • 1 1/2 tablespoonsmixed spices
  • For the kibbeh:
  • 4 1/4 cups water (1 liter)
  • 1 tablespoonsalt
  • 1/2 teaspooneach:
  • Ground cumin
  • Black pepper
  • 1pita bread
  • 3 cupsfine bulgur (about 525 grams)
  • 1onion, grated

Steps

  1. 1

    Heat the oil in a pan, add the ground beef, and cook until it changes color. Add the onions, salt, and spices.

  2. 2

    Stir the mixture until fully cooked and dry, then set aside to cool completely.

  3. 3

    Bring the water to a boil. Add the spices, salt, and pita bread.

  4. 4

    Add the bulgur, mix well, turn off the heat, cover, and let sit for 5 minutes.

  5. 5

    Transfer the mixture to a tray, knead it, and add the grated onion.

  6. 6

    Knead well, sprinkling with cold water as needed, until you have a smooth dough.

  7. 7

    Shape the dough into discs, fill with the meat mixture, seal, and place on a tray. Cover with a cloth to keep them from drying out while you finish the rest.

    Fry in hot, deep oil until golden and crispy.
