Mont-Saint-Michel Style Fluffy Omelet

I saw a TV program that featured the omelet of a well-established restaurant in Mont-Saint-Michel and was fascinated by how they captivate people all over the world, even though the cooking process is very traditional and they only use eggs and butter to make them. So I did a lot of research and came up with this recipe.
If you follow this recipe, it will turn out rather like a dessert (more than a savory omelet). I also recommend the very sweet omelet with more sugar but less salt and pepper. Here, the egg yolk and whites were beaten separately but you can also beat them together. Enjoy the omelet by scooping up the foam with your fork and knife. Recipe by way2go

Steps
- 1
Mix the egg yolk, heavy cream (or milk), sugar, salt and pepper.
- 2
This is how Step 1 looks like when mixed.
- 3
Whip the egg whites with an electric mixer.
- 4
Whip until the mixture forms a ribbon.
- 5
Add 1/3 of the egg yolk mixture to the egg white.
- 6
Gently combine the mixture of Step 5 to the rest of the egg whites.
- 7
Heat the frying pan over medium heat and melt the butter. Pour in the egg mixture and smooth out the surface evenly. Turn down the heat to low and cook for 2 minutes.
- 8
When the edges are crispy, it's done. Turn off the heat and cover with a lid for 5 minutes.
- 9
Fold it in half and transfer to a plate.
- 10
If you like, top with extras like the ☆ ingredients. You can substitute honey for maple syrup too!
