This is based off of an English recipe.
The original recipe used normal sugar and golden syrup, but I used ingredients that are easier to get in Japan.
You can use maple syrup as well.

The recipe requires 50 ml of clotted cream.
You can make it without the mizuame, but it will be brittle.
I ground sea salt with a salt mill. Recipe by Usagi Tabako

Ingredients

30 servings
  • 60 gramsSoft light brown sugar
  • 2 tspMizuame
  • 46 gramsClotted cream
  • 1Vanilla oil
  • Optional:
  • 1 dashNatural salt

Steps

  1. 1

    Add all the ingredients except for the vanilla oil into a small pot, and simmer over low heat while mixing.

  2. 2

    Test the mixture by dropping it into cold water, if it doesn't get dissolved in the water, it's a soft caramel. If you can roll it into a ball between your fingers it's a fudge.

  3. 3

    Add the vanilla oil, and mix. Transfer the mixture onto parchment paper, optionally sprinkle with salt, and let it cool down.

  4. 4

    Let it chill for about 1 hour in the fridge and cut into smaller pieces. It contains 554 kcal total. If you wrap up each piece you can freeze them.
