Very simple yet elegant dish by using one of the most widely loved fruit for it's nutritional value and taste both. An apple a day might not keep the doctor away, but you might never take a chance to miss this delicious pilaf at any cost. Green apples, one of the most loved and widely loved fruit now used in a pulao recipe by me for the first time. This innovative idea of mine has all the benefits of these sour and sweet apples along with the richness of ghee. Exceptionally awesome in taste and is best eaten on it's own without any additional accompaniments whatsoever. The phrase an apple a day keeps the doctor away fits it perfectly well. However you might not stay away from this yummy enticing pulao after tasting this once.

Ingredients

35 minutes
5 servings
  • 3 cupsBasmati Rice
  • 4Green Apples cored and cubed
  • 2 tspGinger garlic paste
  • 2 tspSalt or to taste
  • 1/4 cupGhee
  • 1Star Anise
  • 4Green Cardamoms
  • 1 inch Cinnamon stick
  • 5-6Cloves
  • 2Bay Leaves
  • 1 tspGaram Masala
  • 1 tspCaraway Seeds or Shahjeera
  • 1 tspCumin powder roasted
  • 1 tspCoriander powder roasted
  • 4Green Chillies finely chopped
  • 1 bunchchopped Coriander Leaves
  • 3 tbspGolden Raisins
  • 2 tbspCashewnuts
  • 2 tbspAlmonds
  • 6 cupsVegetable stock OR
  • 2 cubesMaggi Seasoning

Steps

    Soak rice for 15 minutes at first. Cook it al dente in about 6 cups of vegetable stock.

    I have taken 2 cups of stock to one cup of rice. You can take it accordingly as required. Apples should be cored and cubed into medium sized pieces.

  3. 3

    In a cooking pot, add ghee and fry the nuts selected by you. It is entirely your choice. Remove and keep aside. Now into the same ghee, add the whole spices and finally the sliced onions. Saute the onions until done.

  4. 4

    Saute it for a minute and then add the powdered spices followed by the green apple cubes. Adjust salt according to taste. Saute these apple cubes lightly for about 4 to 6 minutes on a low heat. Keep it covered.

  5. 5

    Apples will be tender and soft in about 4 to 5 minutes but do not over cook them. Now toss in the cooked rice. Also add the toasted raisins, nuts and coriander leaves. Fluff it up once very gently. Serve it piping hot alongside any curry or gravy. Enjoy!
