Ingredients

1 serving
  1. 4-5large mushrooms
  2. 1tomato, de-seeded and diced
  3. 1 packfrozen cauliflower rice (I use Tesco’s)
  4. Olive oil
  5. Salt and pepper
  6. Garlic dry seasoning (see photo)
  7. Handfulfresh basil, torn

Steps

  1. 1

    Cook the cauliflower in the microwave as directed.

  2. 2

    Fry the mushrooms in a splash of olive oil. When they start to release moisture, add the tomatoes and keep the heat relatively high.

    Add salt and pepper to the pan and a good twist of garlic seasoning (or garlic powder if you have that).

    Add the cauliflower and stir fry it all together. Add the basil and stir for another minute before serving.

  5. 5

    Top with a final glug of good quality olive oil.
