French fries are just deep-fried potatoes which are cut into batons. I have tried to make it in a simplest way for your convenience. These can be enjoyed as it is or as a side dish especially with burger or any chicken fries or with sandwiches.

French fries are just deep-fried potatoes which are cut into batons. I have tried to make it in a simplest way for your convenience. These can be enjoyed as it is or as a side dish especially with burger or any chicken fries or with sandwiches.

Firstly wash the potatoes well then peel them and cut them into batons, as shown below.

After cutting them, wash them gently, by changing water, 4 to 5 times, until you get a clear. The reason behind this is the starch released from the potatoes should be completely washed off, so that it becomes light and crispy.

Now dip them in ice-cold water, cover it and leave them as it is for about 10 mins. The reason behind the potatoes dipped in ice-cold water is that it should not change its colour after cutting.

After 10 mins. remove them from water and shatter them over a kitchen towel. Now place another kitchen towel over it and press them gently so that the excess water on the potatoes gets absorbed. Now leave it as it is for 10 to 15 mins below the fan.

Now heat a pan, add oil for deep-frying. Don't let the oil to get hot. Add the potato slices in cold oil. Let the oil get hot slowly and gradually, just we do in samosa making. Let the potato slices fry in the oil very slowly. Half-fry them on medium flame.

Now shatter them over a tissue paper as shown below. Put another tissue paper over it so that the excess oil gets absorbed.

Now sprinkle some cornflour over it (abou 2 tbsp). Combine them well so that it gets coated with the fries, very well. Now keep these half-fried coated potatoes inside a tiffin box and keep it inside the freezer for half an hour.

After half an hour, remove them. Now heat some oil for deep-frying (same oil). But this time the oil should be completely hot. Once the oil gets hot put the half-fried coated potatoes into the oil and fry them on medium flame for 7 to 8 mins until they turn crisp and golden.

Now remove them over a strainer. Donot remove them over a tissue paper or else it would get mushy. Repeat the same with the rest of the batches. Then sprinkle some table salt over it & gently flip them. You can serve them as it is with some ketchup or dips or with any burger of your choice, as a side dish.
