Leek and Potato Soup

Leek and potato soup is a very creamy soup which is prepared with very few ingredients. It is prepared using potatoes, leek, vegetable stock and fresh cream. Fresh cream can be replaced with full fat milk also. Potato gives this soup creamy and thick texture. It is a mild and delightful soup to have on a cold or a rainy day.

Prepare onion, potato and leek for the soup. Only cut the white part of the leek and discard the leaves. Heat butter in a pot and add bay leaf, onion, garlic and leek to it. Saute it on medium heat for 2 to 3 minutes.

Now add potatoes, salt, black pepper powder and vegetable stock to it and mix it well. Cover and cook it on medium heat until potatoes are cooked properly. Let it cool down.

When the soup is still warm, blend it with the help of a hand blender. You can even blend it in the mixer grinder. Now add milk to it and cook it on medium to low heat for 8 to 10 minutes.

Garnish the soup with fresh cream and fresh garlic or spring onion. Serve it hot.
