One of my favourite potato dish.
Love to have it with Rice, Dal, Macher' jhol etc..or with tea as evening snacks.
It needs a little bit of hard work but outcome is wonderful

Wash the potatoes thoroughly and thin slice with a sharp knife or a slicer and keep in a bowl of cold water. You can leave the skin or peel it.
Once sliced, wash it once more and cut the potato slices vertically....as thin as a match stick and soak it in water till it stiffness up.
Drain the water out and spread it on a clean dry cotton cloth (as seen in pic)

Once the excess water dries up, fry the potato sticks, taking about a handful of it (don't put everything together) at one time, depending on the oil and size of kadai, do not overcrowd. Adjust the flame. I always heat the oil on high flame and then lower the flame and fry it till it's crispy.Once it comes to room temperature, you can sprinkle it with salt, chaat masala,whatever you prefer and mix fried peanuts and curry leaves (optionals) serve it with rice or have as a snack.
