Ramen-style Glass Noodle Soup for Dieters

Since it's so hot outside, I often having cravings for cold pints of beer. Beer can lead to over-eating, though. This is definitely something that will still go great with your drinks, even without the extra calories.

If you use bean sprouts or lettuce instead of cabbage, you can enjoy more variations. (I'm trying to make the miso based soup version at the moment.) The soup contains a lot salt, so don't drink it up when you eat this dish often! Recipe by Niku atsuko

Ingredients

2 servings
  1. 50 gramsCellophane noodles
  2. 200 gramsCabbage
  3. 1/2 cloveGarlic
  4. 1 1/2 tbsp★Chicken soup stock granules
  5. 1 1/2 tbsp★Soy sauce
  6. 1 tsp★Vinegar
  7. 1 pinch★Sugar
  8. 1Boiled egg
  9. 3 sliceHam
  10. 1Vegetables you like
  11. 1 dashPepper

Steps

    Immerse the cellophane noodles in hot water for about 3 minutes to soften. Cut into half. It is no problem if the inside is still hard at this stage!

  2. 2

    Core the cabbage and julienne.

  3. 3

    Heat 600 ml of water, grated garlic and ingredients marked ★ in a pan.

  4. 4

    Bring to boil, and add the shredded cabbage and the glass noodles. Boil until they are soft enough to eat.

  5. 5

    Serve in a bowl, and top with ham, boiled egg (cut in half) and vegetables! Sprinkle pepper if you like.

  6. 6

    Use lots of vegetables for the topping and make the dish more filling and nutritious! I topped my dish with bitter melon (goya) rubbed with salt, chives (nira) and goji berries.
