It's my daughter's favorite dish.

Chorchori is a traditional Bengali delicacy cooked in Bengali homes at all most occasions.
Today I made tasty mixed vegetables Bengali chorchori recipe using mustard seeds paste.
It's my daughter's favorite dish.
Steps

Wash the vegetables. Peel and cut 1.5" lengthwise.

Take a grinder add mustard seeds, green chili, salt, and little water, and grind a smooth paste.

Arrange all mentioned ingredients.

Heat mustard oil in a Kadai, fry bori, and brinjal one by one, and keep aside.

Heat mustard oil same Kadai and add panch phoran, whole red chili, bay leaves and saute.

Then add all vegetables and add salt, turmeric powder and saute then cover and cook on low flame until all vegetables are cooked 80%.

Now add fried bori, brinjal, mustard seeds paste and little water and mix well. Again cover and cook for 5-6 mins.

Now open the cover and keep stirring at intervals and cook till dry, done. chorchori is ready.

Serve with plain steamed rice.
