Simmered Radish

Cooking Instructions

Peel and cut daikon. Then make diagonal “cross slits” on daikon. Place in a pot and fill with water to about 1-2 cm above daikon. Boil with 2 tbsps rice for 20 mins or till soft. Rinse well.

Mix all marinade ingredients in a pot. Place rinsed daikon in it. Bring to a boil and then cover with a drop lid (I used an aluminum foil). Continue to cook for about 20 mins on low heat.

Let cool and transfer to a ziplock bag. Marinate overnight or enjoy immediately! We microwaved it on medium (700W) with some broth to reheat it!

I just came up with this, using what I had in my kitchen.You can use atsuage instead of fish paste sticks if you like.If you would prefer the eggs to have a stewed texture, don't simmer them, just let them cook on residual heat.
