This is the Spanish cauliflower rice I use.

I put the rice and left over chicken in a medium pan over medium heat. Add extra enchilada sauce as it cooked. Top with shredded cheese and it was done. Top with lettuce, tomatoe, avocado, guacamole, pickled jalapenos, etc.
