Add butter to a bowl, mix for 2 mins until creamy. Add powdered sugar and continue mixing.

Add vanilla essence and mix for another 12mins until light and fluffy.

Then add the flour in two batches. Mix until well combined. Add 2-3 tbsp of flour if the dough is too soft.

Shape into a disk form, wrap in a plastic wrap. Refrigerate for 1 hour. Sprinkle some flour and roll out the dough. Cut into desired shape.

Transfer the cookies to a baking tray. Roll out the leftover dough and cut more cookies.

Bake at 180C for 12-13mins until slightly golden. Allow to cool. Then serve.
