In a saucepan, gently heat the milk, lemon zest and juice, split vanilla bean with seeds scraped, and butter over low heat.

In a separate bowl, whisk together the sugar, eggs, and egg yolks.

Add the flour and mix until combined.

Gradually pour in the warm milk mixture, stirring as you go.

Pour the batter into your cannelé molds. Bake for 15 minutes at 480°F (250°C), then reduce the temperature and bake for another 20 minutes at 375°F (190°C).

Let cool before removing from the molds.
