I had a craving for potage so I made this.
Please adjust the thickness with milk.
Double the amount of kabocha and onion for a thicker soup.

My Family's Easy Kabocha Squash Potage
I had a craving for potage so I made this.
Please adjust the thickness with milk.

Steps

Peel and slice the kabocha and microwave until soft.

Thinly slice the onion. Melt butter in a pot and sauté the onions. Add water and cook until soft.

Add the kabocha and purée with a blender or hand mixer.

Add milk and stock cube. When the stock cube is dissolved, season with salt and pepper to finish.

I used the leftovers to make lunch the next day.

If you want to skip Step 1, you can add the sliced kabocha squash to the pot after you saute the onions and cook until soft. Follow all the other Steps as they are.
