Hasawi Kibbeh (Hasawi-Style Wheat Dumplings)

Hasawi kibbeh is a well-known dish from Al-Hasa, made in the style of local bakeries. It's very easy and quick to prepare—just a couple of minutes on the stove or in a skillet.

Soak 2 cups of hulled wheat (harees) in water for at least 3 hours. I used standard white plastic supermarket cups.

Finely chop about 2 tablespoons of parsley, 1 tablespoon of cilantro, and 1 tablespoon of onion. Mix them together—this will be your filling.

After 3 hours, the wheat will have expanded and softened. Drain the wheat, then place 2 cups of it in a food processor or blender with 1/2 cup flour, a pinch of salt, and a pinch of cumin. Blend until you get a sticky dough.

Sprinkle flour on your work surface. Take some dough, place it on the floured surface, and flatten it slightly with your hands. Add some filling in the center, fold the dough over the filling, seal it, and then flatten it again as shown in the video.

Don't roll them too thin—keep them thick, just like the ones from local bakers.

Bring a pot of water to a boil. Drop the kibbeh into the boiling water. When they float to the surface, they're done.

Once they rise, remove them and let them dry off as shown below.

After drying, keep them separated so they don't stick together.

Once dry, you can freeze them for later or cook them on a skillet whenever you like.

Use just enough oil to lightly grease the skillet—not too much, not too little.
