Ingredients

4 people
  1. Coconut Rice
  2. 2 cupsrice
  3. 1 cupwater
  4. 1 cupcoconut milk
  5. 2Bay leaves
  6. 1lemongrass
  7. 5 cmgalangal/ginger
  8. 1 tspsalt

Cooking Instructions

45 minutes
  1. 1

    Wash the rice 3 times or until the water slightly clearer.

  2. 2

    In a medium pot, put rice, water, coconut milk, bay leaves, galangal, lemongrass and salt, stir and cook in medium heat until the water reduced. (or just cook it in rice cooker, skip the steaming step)

  3. 3

    While the rice cook, prepare steamer pot, let it boil.

  4. 4

    Once the water reduce, move the rice to the steaming basket and steam for 20-30 minutes.

  5. 5

    Once it's done, serve it with shrimp crackers, sliced cucumber, sambal, fried chicken and sprinkle some fried Shallots ✨
