  • 4 1/4 ozyoung tamarind
  • 1 3/4 ozground pork
  • 1/2 teaspoonsalt
  • 20bird's eye chilies
  • 1bulb garlic
  • 1bulb shallot
  • 1/2 tablespoonshrimp paste
  • 1 tablespoonpalm sugar
  • 1/2 tablespoonfish sauce
  • 2 tablespoonsoil (for frying)
  • Fresh vegetables of your choice

    Preparation: Wash the young tamarind thoroughly and let it drain.

    Cut into small pieces. Grill the shrimp paste until hot. Prepare the young tamarind by placing it in a mortar.

    Pound coarsely, then add the bird's eye chilies and pound coarsely again.

    Add garlic and shallot, and pound together with the shrimp paste.

    Pound everything together again. Cooking: Heat a pan over medium heat, add oil and ground pork, and stir-fry until cooked.

    Add the pounded paste and a little water. Season with palm sugar and fish sauce, and stir-fry until the paste is dry.

    Taste and adjust seasoning as desired. Serve in a bowl with fresh vegetables of your choice.
