An interesting Brinjal or Eggplant delicacy made as a side dish. The Eggplants used here in this recipe by me are both the Green and the Purple colour one's that are easily available in the Indian markets. Though it can be made with any of these two on their own as well but I had used both the varieties of Eggplants in this dish. These pretty looking little cut Eggplants are shallow fried in a pan with some selected spices and Kasuri Methi along with Onions. A tantalizing side dish to your favourite mealtime with your loved ones.
That's it. As simple as that.
A quick side dish that goes well with both Rice and Rotis.
And it is a perfect one on any day for the mealtimes. Be it Lunch or Dinner, it's just right.

Steps

Wash and cut the eggplants lengthwise into thin strips. Immerse them in some salt water to retain their colour.

The Salt water will prevent them from losing their colour. In a pan, heat Oil and saute the Onions until translucent. Add the Ginger garlic paste and the Green Chillies now. Saute all of it for a minute or so. Then add the rest of the spices followed by the Eggplant strips.

Cover and simmer on a low heat for 15 to 20 minutes. Add little water before closing the lid as required.

Add Kasuri Methi and cover with a lid. After about 15-20 minutes of simmering on a low heat, it's almost done. See to it that they are nicely done and Oil starts separating from the sides.

Garnish with lots of chopped Coriander Leaves and saute it for a minute or two before taking it off the heat.
