Stir-Fried and Simmered Zucchini & Atsuage

I thought of this recipe because I wanted to combine zucchini, an ingredient typically found in Western cooking, with Japanese-style cooking.

If you crush these atsuage up a little while stir-frying, the flavors will blend better.
I used 2x concentrated mentsuyu. If you're using the straight type then please increase the amount of soy sauce a little. Recipe by Raby

Ingredients

3 servings
  1. 1Zucchini
  2. 1packet Atsuage
  3. 1 bunchChirimen jako - salted semi-dried tiny fish
  4. 1 tbspSesame oil
  5. 2 tbspMentsuyu
  6. 1/2 tspSoy sauce
  7. 2 tbspToasted white sesame seeds
  8. 1as much (to taste) Green onion or scallion

Steps

  1. 1

    Slice the zucchini into 6-7 mm wedges and cut the atsuage into 2 cm cubes. Thinly slice the green onion.

  2. 2

    Oil a frying pan with sesame oil and heat it up. Add the zucchini and lightly stir-fry, then add the atsuage and chirimen jako and continue to cook.

  3. 3

    After 1 minute of stir-frying, pour in the mentusyu and soy sauce, stir-fry everything together and stop the heat.

  4. 4

    Transfer to a plate and serve topped with a sprinkling of sesame seeds and green onion.
