The classic hummus is a must have when one visits any of the middle eastern countries. It's a dipping paste made with boiled and ground chickpeas along with Tahini or sesame paste and drizzled with olive oil. Its nutty, earthy flavour with hint of garlic and lemon goes very well with Pita bread and many other flat breads. Falafel is also served with hummus and the combination is irristible. It's a classic party recipe too! Enjoy.
