Chop your peppers, onion and tomato, set aside. Pour little oil in a pan, add in chopped onion, saute for few minutes, then add in chopped peppers and tomato. Stir fry for 2-4mins,

Add seasoning, curry, black pepper and pinch of salt, stir. Break your eggs and add. Stir well and cook until the eggs scramble. Keep aside.

Grease another pan with butter. Spread the bread with butter, place one slice in the greased pan, add in the egg mixture on top and cover it with another slice. Toast both sides on low flame until golden brown.

Repeat for the remaining slices. When it's done, cut into halves and enjoy.
