Lettuce with homemade pickled mushrooms

Very easy recipe! Can be serve hot or cold when you need a refreshing side dish! I use portobello mushrooms here but you can use any type of mushrooms. If not eating with lettuce, I suggest doubling the amount of mushrooms used.
I used the microwave to cook everything here but you can also choose to sauté the mushrooms in a pan and blanch the lettuce.

Slice portobello mushrooms and place it in a microwavable bowl. Mix evenly with sesame oil. Microwave mixture for 4 mins on medium (700W).

Mix all marinade ingredients and pour over mushrooms. Leave to cool and store in fridge overnight if possible.

Hand tear lettuce into large pieces. Cover with cling wrap and microwave on medium for 5 mins.

Top lettuce with pickled mushrooms. Done!
