For the Chicken:

Place the olive oil, lime juice, garlic, salt, pepper and ground cumin in a large bowl. Whisk to combine.

Place the chicken drumsticks in the bowl and coat them in the marinade. Cover and refrigerate for at least 2 hours.

Preheat the oven to 400°. Coat a sheet pan with cooking spray.

Arrange the drumsticks in a single layer on the sheet pan. Bake for 40 minutes or until chicken is cooked through.

Season sliced pepper generously with salt pepper, and a drizzle of oil. Add the pepper to the other half side of the baking sheet next to the chicken drums when there is about 15 minutes left on the chicken.

For the Garlic Mash:

Cut the potatoes into 1/2inch pieces.

In a pan over medium heat, add oil until shimmering. Toss in garlic and cook until fragrant. Add in 2 cups water and potatoes and bring to a boil, 15 minutes.

Drain potatoes, reserving 1/4 water for potatoes.

Return potatoes to pan and mash, adding 1tbsp water until creamy. Season with salt, pepper, and parsley. Mix well.

For the Shrimp:

Pat shrimp dry with paper towels, and season with salt and pepper.

In a small fry pan, add oil under medium-high heat. Once oil shimmers, add in shrimp and cook until opaque halfway, 45-60 seconds. Flip and repeat until cooked. Remove from heat and plate.

Plating:

Spoon mash in the center, then top with a single layer of peppers. Top with chicken drums, shrimp, and sprinkle parsley on top.
