Sattu Paratha

Sattu is a type of flour which is prepared by roasting and grinding gram beans. It is very much popular in Northern parts of India. It is even prepared from other type of pulses. Sattu is very healthy and it gives protein to our body. There are many health benefits of using sattu flour. Many food items are prepared in North India using this flour.
Sattu paratha is different from other stuffed parathas as we usually use the filling of potato, cottage cheese, cheese or vegetables to make stuffed paratha but here sattu flour, onion, some spices, mustard oil and pickle are used to make this delicious paratha. Mustard oil and the pickle used in this paratha plays a very important role and it gives this paratha very nice taste and flavour. This is a healthy, filling and delicious recipe for breakfast which can be served with any kind of pickle, butter or yoghurt.

Mix wheat flour, salt and oil in a bowl and start making a dough using warm water. Knead the dough for 3 to 4 minutes and cover and keep it for 20 minutes. Now divide the dough into 12 equal portions.

Add all the ingredients mentioned under filling in a bowl and mix it well. If there are mango pieces in the pickle then cho it finely. Now sprinkle 2 to 3 tbsp of water and mix it. Divide the filling into 12 equal portions. Do not add a lot of water, just add enough so that everything comes together.

Now take one portion of the dough and roll it into 3 inch circle. Now put one portion of the filling in the centre and close it. Roll it with the help of dry flour. Keep the paratha of medium thickness.

Heat a pan on medium heat and put the rolled paratha on it. When it is light pink on one side flip it. Now roast it on medium heat on the other side also.

Now apply ghee or oil on both sides and roast it properly until slightly crispy and light brown patches appear all over. When it is done, take it out on a wire rack. Prepare all the parathas in the same way.

Serve sattu paratha along with pickle, homemade butter and yoghurt. It is a delicious, filling and healthy breakfast.
