Ingredients

5 minutes
2 people
  1. 2 slicessourdough toast (I used seeded)
  2. 1-2large or a handful of pick & mix tomatoes
  3. 1 clove garlic
  4. 1drizzle of olive oil
  5. Salt and black pepper
  6. Optional/occasional extras:
  7. 1 Sprigfresh basil or parsley
  8. 1 tablespoon Capers
  9. 1fresh Mild Chilli

Steps

5 minutes
  1. 1

    Crush the garlic and spread at the bottom of a small bowl. Wash and slice the tomatoes and place on garlic. Drizzle with olive oil. Season with salt and pepper.

  2. 2

    Toast the bread, I don’t have a toaster - I use my cast iron grill pan.

  3. 3

    To serve top the toast with your tomato mixture and sprinkle with fresh herbs.
