Sattu Ka Paratha Recipe is made out of Sattu which is essentially the roasted chana flour and also known as "Chana Sattu" .
Chana Sattu is used in many
authentic Bihari recipes such as : Litti-Chokha or Sattu ka Sharbat . A most common way to use Sattu is in parathas. It is a staple food of Bihar region of India.
For this recipe Chana Sattu is spiced with onion, ginger-garlic , achar (mango pickle) and herbs and stuffed into the whole wheat dough, cooked on tawa and served with chutney and curd .
Sattu is full of fiber, and essential nutrients like protein thus making this one a healthy dish that can be served for breakfast, lunch and dinner as well.

Ingredients

  • For dough
  • 2 cupwheat flour
  • 1 tspcarom seeds (ajwain)
  • 1 tbspfinely chopped coriander leaves
  • 1/2 tspsalt
  • As neededWater to knead the dough
  • 1 tspghee
  • For Sattu stuffing...
  • 1 cupchana sattu (use fresh sattu always)
  • 1/2onion, sliced
  • 4-5garlic cloves
  • 1/2 inchginger
  • 2green chilli
  • 1 tspcarom seeds
  • 1/2 tspblack cumin or (kalaunji)
  • 1 piecemango pickle and 1tsp pickle masala
  • 1 tbspoil of mango pickle
  • 1/2 tspsalt or to taste
  • 1 handfulcoriander leaves
  • as requiredGhee or oil to cook paratha

Steps

  1. 1

    In a mixing bowl add in flour, salt carom seeds and coriander leaves, mix everything well.
    Make a semi soft dough by adding water little by little.
    Once the dough is ready add ghee and knead it again.
    Keep it aside for 15-20 minutes.

    Meanwhile, prepared the stuffing....
    In a food processor add onion, ginger, garlic and chilli and blend until the veggies are finely chopped.

    Then, in the same food processor add chana sattu, carom seeds, black Cummin, salt coriander leaves, pickle, oil and 1tbsp water. Blend until everything mix together.
    ✔(If you don't want to add pickle then use lemon juice, but pickle works better)
    ✔(You can also prepared this stuffing without food processor, only you need to use finely chopped veggies and Blend it with all other ingredients.)

    Further, Take out a ball from the dough. Spread the dough and
    Place 1-2tbsp filling in the center.
    Gather the sides to cover and seal the stuffing. Pinch off excess if any.

    Dust well and roll into thick paratha gently.

    Heat tawa, once hot, cook the paratha both sides with ghee drizzled. Cook in medium heat until golden spots appear.

    Similarly prepared all parathas.
    Serve hot with some extra butter spicy coriander chutney, sweet chutney or curd. Enjoy.
