Dashi Chazuke with Broiled Eel

I love eel. I added mirin to a recipe that I have been making for a very long time.
I turned it into an easy-to-make, single serving recipe.
Step 1: It tastes delicious if you first make a rice bowl with broiled eel and then turn it into ochazuke.
It's fine to mix the eel sauce directly into the rice first.
Using bonito dashi stock releases a much more delicious flavor than using instant dashi granules. Recipe by Yuuyuu0221

Summertime Chilled Ochazuke (Rice with Tea) with Dashi Stock Granules Summertime Chilled Ochazuke (Rice with Tea) with Dashi Stock Granules
This is a chilled ochazuke dish that can be easily eaten on a hot day. It is delicious made with just cold tea, but it tastes even better with dashi stock granules.Make sure to rinse the warm rice quickly in water, remove the stickiness, and thoroughly drain. You can use barley tea, roasted green tea, or oolong tea instead . Green tea is good because it isn't bitter (This time I used bottled green tea that was on sale). Recipe by Erueru286 cookpad.japan -
Sautéed Asparagus with Shiro Dashi Sautéed Asparagus with Shiro Dashi
I've been using a lot of shiro dashi of late. It is key to the flavoring and I love the umami it gives.Since asparagus in season is so delicious I wanted to create a simple dish. When sautéing the asparagus, brown it first, then steam to bring out the sweetness. Recipe by Mimato cookpad.japan -
Refreshing Chilled Tomato in Dashi Stock Refreshing Chilled Tomato in Dashi Stock
I recreated a dish that I had at a kaiseki restaurant (traditional multi-course meal) inn. Some of the acidity from the tomato will leak into the dashi stock, so it's best to make salty stock. Adjust if needed by adding salt.I make this with golf ball sized tomatoes, but you could use large tomatoes, too. For 4 servings. Recipe by Cookie shiasu cookpad.japan -
Dashi Gelée Soup Dashi Gelée Soup
I arranged my favorite type of gelée soup by loading on toppings and using my current obsession of dashi.Adjust the amount of salt to preference. If you are using umeboshi, I think it's best to use less seasoning to balance out the flavours.Ginger gives it a nice touch. It's optional, but I think it's best if you add it. Dashi Kombu Side Dish - Enjoy With Rice or as a Snack Dashi Kombu Side Dish - Enjoy With Rice or as a Snack
I came up with this when I made a Japanese-style dashi for chicken soup stock for my ramen noodles It's delicious! The amount of 'dashigara' (leftover kombu and bonito flakes from making dashi soup stock) is not precise. Adjust the amounts depending on your leftover dashigara.I use roughly shaved dried bonito flakes, which have a strong taste and give a nice flavor. If you prefer it sweet, add about 1/2 teaspoon sugar to taste. Mentsuyu Noodle Dipping Sauce with Dashi Stock Granules Mentsuyu Noodle Dipping Sauce with Dashi Stock Granules
I usually have"Multi purpose mentsuyu concentrate" in stock, but I decided to upload this version too since many people only have dashi stock granules on hand.It is a bit different from the usual recipes, but I experimented many, many times in order to make a tasty mentsuyu sauce even using dashi stock granules.Even if it's a bother, it makes a big difference to the flavor, so please don't skip the "boiling off the mirin" part in Step 1.If you let soy sauce come to a full boil it loses flavor, so please pay attention in step 4.This is a tasty mentsuyu sauce even if it's not an emergency. When you use dashi stock granules, the flavor does tend to be a bit harsh, so I increased the amount of mirin. Please use more or less mirin to taste.I gave a wider range for the water amount, to account for the tastes of people used to the strong concentrated flavor of store-bought mentsuyu concentrate. Marinated Ochazuke with Leftover Sashimi Marinated Ochazuke with Leftover Sashimi
This is a dish for taking care of leftovers after making hand-rolled or ehoumaki sushi.I don't really have any tips besides the recommendation to let it sit overnight. If you add mirin and oil, it will keep for a few days. If you don't add oil, it'll become salty and watery over time. Recipe by RicoPing cookpad.japan -
Golden Dashi - Superb Oyako-Don With Egg and Chicken Golden Dashi - Superb Oyako-Don With Egg and Chicken
My family loves using shiro dashi with everything.I had a lot of eggs, I made this nice oyakodon. It has a great feeling of being at home.Use shiro dashi for the dashi. Not "white" soy sauce, "white" dashi! Don't make a mistake! If you let it simmer too long, it will be too heavy tasting, so be careful. You can add some extra water if you need to. Recipe by hime*Rinn cookpad.japan -

Since it was a waste to throw out the leftovers...If you don't have mirin, substitute with a tablespoon sake and a tablespoon sugar. While it's best to eat it up as soon as possible, it should last about 2 weeks in the refrigerator since it's seasoned quite well. For the recipe on making dashi, see. Dashi-Flavored Eggs For Bento Dashi-Flavored Eggs For Bento
This is a dish we make often at our home.My mother taught me a different recipe to make sweetened atsuyaki eggs, but this one is also one of our favorites. There are two ways to roll the egg: A. To roll it up from the start, or B. Don't roll at the start but rather gather it to the sides to cook. If you'd like the cross-section to look nice, try the former way.
