Rich Kinako Cupcakes

I love kinako powder and I wanted to make dense cupcakes, which keep well. I changed the photos and made additions, but the ingredients and quantities are the same.
The baking time is an estimate. Adjust to your oven at home. Add raisins and it will taste nice. Dust the raisins with a little of the sifted ◎ ingredients and add to the batter at Step 4 (when you add the dry ingredients in batches. Maybe add the dusted raisins after the second batch of the dry ingredients). Use anything you like for toppings. Recipe by Sabumochi

Cooking Instructions

[Preparation] Put the butter in a bowl and leave at room temperature. Sift the ◎ dry ingredients. Leave the eggs at room temperature. Line the moulds with paper cases.

Cream the butter until smooth and add the sugar in 2 ~3 batches. Beat constantly. Add the salt.

Beat the eggs well and add a little at a time into the bowl. Beat constantly and stir in the almond flour.

Preheat the oven to 180ºC. Take out the baking sheet from the oven. Add the ◎ dry ingredients to Step 3 in 2~3 batches and fold in with a plastic spatula.

Pour the batter into the cupcake holders. Top with ama-natto (or walnuts and sesame seeds) if available.

Bake in the preheated oven for about 15 minutes. When a skewer inserted comes out clean, it is done. Cool slightly first, then cover with cling film and cool completely.

It tastes better if you let rest overnight. They keep well so they are good for gifting.

I added black sesame seeds into the batter (not listed). You could put as much as you like but I add 1.5 teaspoons to the half of the batter above.

With anko. I made 15 g balls of anko and froze them partially in advance. I then put the anko balls inside each cupcake batter and baked them.

Adjust the time depending on how big the cupcakes are (the timing here is for 100 ml cupcakes). I think the cakes should be delicious with sesame seeds. For 6 or 3 100 ml muffin cups worth. As I wrote in the description for this recipe, I wanted to make something that only required one egg, mixing only, no oil, not much sugar, and saved a ripe banana.I thought I could adjust the ingredient amounts used in, "Mochi Flour Muffins 2", and it worked.If you make the basic cupcakes (including chocolate chips) in 5 molds, each cupcake will be about 145 kcal.Wrap tightly in plastic and store in the refrigerator. Since a very ripe banana is used, the cupcakes don't keep very well. I recommend freezing any that are left over.I prefer not-so-sweet things, so I'm happy with this ratio, but if you prefer it to be sweeter then please add more sugar or chocolate chips. The cocoa powder should be unsweetened. The bake time is just a reference and will change depending on your oven so adjust accordingly. If you used the amount of ingredients listed for Step 3, each cupcake should contain around 253 kcal. They're satisfying but still big enough even if split into 4 (190 kcal each).
