Super green Brussel sprout and Edamame salad for lunch
Steps

Place Brussel sprouts, peas and edamame in a bowl with 2 tbsp water. Cover and microwave for 3 minutes.
NB- Frozen veg can be cooked quickly and effectively in a microwave. If I was cooking fresh ingredients I would steam these.

Chop your parsley, mint and spring onion.

Drain water from the cooked veggies and add the herbs and onion.

Season well with salt and chilli flakes
- 5
Mix your dressing ingredients together and drizzle over. Enjoy.
