Today I made this wonderful organic Sicilian Genovese pesto. The basil is organic and comes from my garden. It's fresh and very tasty. I make these preserves for the winter.

Today I made this wonderful organic Sicilian Genovese pesto. The basil is organic and comes from my garden. It's fresh and very tasty. I make these preserves for the winter.
Steps

Use organic basil from your garden, if possible.

Remove all the basil leaves from the stems, weigh them, and soak them in cold water.

Prepare the grated cheese, garlic head, and pine nuts.

After washing the basil leaves several times, dry them in a salad spinner. If you don't have time to air dry, use the spinner, then lay the leaves out on a clean kitchen towel.

Place the basil leaves, salt, grated cheese, garlic, pine nuts, and olive oil in a blender. Blend everything together until smooth.

Your organic Sicilian Genovese pesto is ready to enjoy! Serve it at the table to garnish your favorite dishes.
