In a large bowl, add the yogurt. Mix in cumin powder, chaat masala, dried fenugreek leaves, garam masala, mint powder, black pepper powder, butter, black salt, and salt. Stir well to combine.

Add more butter and a little red food coloring if desired. The food coloring is optional.

Remove the soya chaap sticks and rinse them thoroughly.

Cut each stick into two pieces.

Add the soya chaap pieces to the marinade and mix well to coat.

Heat oil in a pan and deep-fry the pieces until golden and crispy. Fry on medium to low heat to ensure even cooking.

Cut the fried soya chaap into small pieces.

Add chopped onion, cilantro leaves, and a squeeze of lemon juice. Mix well.

Add red chili powder, chaat masala, garam masala, and cream. Mix thoroughly.

Add more butter and mix again.

Serve hot on a plate with some sliced onions and chutney.
