First, boil the potatoes.

Heat oil in a pan and add mustard seeds.

When the mustard seeds start to pop, add the ginger, garlic, and chili paste and sauté. Add curry leaves, then add the boiled and lightly mashed potatoes. Add turmeric, salt, and red chili powder, and cook for 2-4 minutes.

Grind together green chilies, garlic, coconut, and cilantro leaves to make a paste.

In a bowl, make a batter with chickpea flour. Shape the potato mixture into small balls, dip them in the batter, and coat well.

Fry the coated potato balls in oil until golden brown.

Slice the pav buns in half.

Spread green chutney on both sides of the buns, place a vada in the middle, and serve.
